Hutsulka Square

Hutsulka Square – easy to prepare, tender dish. Tender shortbread, loose protein mass, tartness of currant jam, nuts and delicate cream – all these ingredients are successfully combined with each other and create an incredible melody of taste.

Plyatsok Hutsulka – ingredients

  • For the dough:
  • Flour – 3 and 1/3 cups.
  • Powdered sugar – 1,5 tbsp.
  • Vanilla sugar – 15 g.
  • Baking powder – 1 tsp.
  • Oil – 200
  • Yolks – 5 pieces.
  • Sour cream – 2 tbsp.
  • For the filling:
  • Currant jam.
  • Squirrels – 5 pieces.
  • Sugar – ¾ cup.
  • Jelly – 1 package.
  • Chopped walnuts – 2 good handfuls.
  • For the cream:
  • Cream (from 30%) – 500 ml.
  • Powdered sugar – 3 tbsp.
  • Cream cheese (any) – 250 g.
  • Cocoa – 2 tablespoon

Plyatsok Hutsulka – a recipe for cooking


Mix flour, powdered sugar, vanilla sugar and baking powder. Add cold butter cut into small cubes. Cut with a knife until a small oily crumb is formed. Add yolks and sour cream, knead the dough.

Divide the dough into two equal parts, wrap it in cling film, put it in the refrigerator for 30-40 minutes.


Beat the egg whites to a stable foam, add sugar one spoon at a time, beating well each time (until the sugar is completely dissolved. Add jelly, beat until the ingredients are combined.

Remove one part of the dough from the refrigerator. We roll out on parchment according to the size of the form (20×30), transfer together with the parchment into the form. Lubricate the dough well with jam, sprinkle with finely chopped nuts, spread the protein mass, level it.

Bake the cake at a temperature of 190 degrees for 35-40 minutes, until golden brown. We are cooling.

Take the rest of the dough out of the refrigerator, roll it out according to the size of the form, bake at a temperature of 190 degrees for 25-30 minutes.


Beat well-chilled cream together with powdered sugar to a thick, fluffy mass, add chilled cream cheese, and beat again. Add cocoa, beat well again.

Spread the cream on the cake (without protein mass), level it, cover with the cake with the protein mass, sprinkle with powdered sugar.
