Ingredients for making Italian walnut cake

  • For the dough:
  • flour – 1 tsp.
  • eggs (proteins) – 4 pcs.
  • walnuts – 150 g.
  • sugar – 150 g.
  • citric acid – 1 pinch.
  • salt – 1 pinch.
  • For the cream:
  • heavy cream – 300 ml.
  • powdered sugar – 1 tbsp.
  • dark chocolate – 120g.

Preparation of Italian walnut cake:

We clean the walnuts, cut them finely and dry them in a dry pan.

Beat the whites with a pinch of salt and citric acid into a foam. Gradually add sugar and beat into a thick foam.

We introduce flour, nuts, mix easily to a homogeneous consistency.

Cut out 6 circles with a diameter of 18 cm from parchment paper. Sprinkle each sheet with flour and spread the dough on each sheet. Bake in an oven preheated to 220 C for about 5 minutes.

When the cake is baked, remove it from the oven, set it aside to cool.

Melt 80 g of dark chocolate in a water bath until liquid. Brush 5 cakes with chocolate, leave the sixth cake without chocolate. Set aside to cool the chocolate.

For the cream: whip heavy cream, add 1 tbsp. powdered sugar Beat well. Put 4 tbsp in a separate container. cream Add 30 g of broken (grated) grated chocolate to the cream, mix.

We collect the cake. We put whipped cream on each cake. Cover the top with a clean, beautiful, smooth cake.

Cover the entire cake with whipped cream without chocolate. Sprinkle the cake with coarsely grated dark chocolate on top. We put it in the refrigerator to infuse a little.
