“Kyiv cake” – ingredients

  • For shortcrust pastry:
  • Yolks – 3 pieces.
  • Sugar – 180 g.
  • Butter/margarine – 180 g.
  • Vodka/rum – 1 tbsp.
  • Baking powder – 1 pack.
  • Flour – 550 g.
  • Sour cream – 1-2 tbsp.
  • For meringues:
  • Squirrels – 8 pieces.
  • Sugar – 400 gr.
  • Chopped walnuts or hazelnuts – 300 g.
  • Starch – 2 tbsp.

Recipe for “Kyiv Cake”

First, we prepare the meringue. The general rule of whipping is very important – the bowl of the mixer must be wiped dry and degreased (therefore, for meringue it is better to use a mixer with a metal or glass bowl – it does not “retain” fat. You need to put the egg whites in the bowl of the mixer. We begin to beat the egg whites, gradually increasing the speed until the formation of a stable foam, add sugar gradually and after each time wait 1 minute for the sugar to dissolve completely. The speed of the mixer should be at the maximum. The entire whipping procedure takes about 10-12 minutes.

The next thing to do while cooking “Kyiv cake” – is to chop the nuts, but not too finely, and mix them with starch. Whipped proteins should be carefully mixed with chopped nuts. Now let’s start baking a cake with meringue for “Kyiv cake”. You need to cover a baking sheet with baking paper. Put the mass on a baking sheet and level it with a silicone spatula. The oven should be heated to 80-100 degrees. The cake is baked for about 2-3 hours, you can check with a wooden skewer: if it comes out dry from the middle, then the meringue is ready!

And the next step will be the preparation of shortbread for “Kyiv cake”. It is necessary to rub cold butter with sifted flour and baking powder. Beat the yolks with sugar and vodka. After that, combine flour with yolks and knead all this with sour cream. The dough should be elastic, soft and easy to roll out. If the dough turns out to be tight, then add a little more sour cream. Divide the dough into two cakes. Transfer the dough to a baking sheet and bake until golden at a temperature of 200 degrees for 7-10 minutes. Carefully transfer the baked cakes from the baking sheet to a tray, because the dough is very fragile and fragile. And while the cakes cool down, you can prepare custard for “Kyiv cake”.

So, let’s cook custard. To do this, take 600 ml of milk and put it on the fire to boil. Beat the yolks with a spoonful of sugar, add the flour and starch and pour in the rest of the milk. Pour this resulting mixture into boiling milk on the stove. Over low heat, stirring continuously, bring the cream to a boil and cook for about 1-2 minutes. Remove the finished cream from the heat and add grated white chocolate.

Now beat soft butter with powdered sugar and vanilla sugar into a loose mass. If desired, add 1 tablespoon of rum. Meanwhile, the custard has cooled and you can add the butter mass to it, beating with a mixer at medium speed.

It’s time to put it together “Kyiv cake”. Spread the shortbread with the prepared cream, put the meringue cake on top, cream again and another shortbread. Grease the top cake with the remaining cream. You can sprinkle chopped nuts on top.
