  • A head of broccoli.
  • Mushrooms – 450 g.
  • Onion – 1 large.
  • Ham – 250 g.
  • Eggs – 6-8 pieces.
  • Mayonnaise.
  • Oil.
  • Salt pepper.
  • The onion is green.

Hard-boiled eggs. Separate the proteins from the yolks.

Grate the proteins on a coarse grater, add a spoonful of mayonnaise, salt, and mix.

Rub the yolks on a carrot grater, add 1-2 spoons of mayonnaise, salt, and mix.

Finely chop the onion, fry in oil, grate the mushrooms on a coarse grater, add to the onion, fry until the liquid evaporates, add salt and pepper, remove from the heat. Leave to cool.

Divide the broccoli into smaller florets, pour cold water, add a teaspoon of salt and a teaspoon of sugar, boil for 6-7 minutes. Drain, cut into smaller pieces, put on a dry pan, heat for 2-4 minutes to evaporate excess moisture. Leave to cool. Add 2 tbsp. mayonnaise, pepper and salt, if necessary.

Cut the ham into small cubes.

We lay out in layers in a salad bowl – mushrooms with onions, egg white, ham, lightly pressing, broccoli, yolks. Cover with cling film, put the salad in the fridge for a few hours.

Before serving, sprinkle with chopped onions.
