Lecho – cooking variations

It is no secret that Transcarpathia is a combination of traditions of different peoples: Hungarians, Slovaks, Romanians, Ukrainians and even Jews. We conclude that the traditional festive table or daily dinners in families combine sharpness, softness and color at the same time. And real housewives like to be able to serve one dish in different variations. Such a Transcarpathian delicacy is “Lecho».

Vegetarian lecho recipe (without meat)

Vegetarian recipe for lecho (without meat) – ingredients

  • Bulgarian sweet peppers (red and yellow) – 500 g.
  • Ripe home-grown tomatoes (pink variety is best) – 400 g.
  • Two yellow bulbs.
  • One chicken egg.
  • Vegetable oil.
  • Spices according to your wishes: salt, black and red pepper, greens, bay leaf.

Vegetarian recipe for lecho (without meat) – cooking recipe

  1. Wash and deseed the peppers, cut them into half rings.
  2. Clean the onion and tear it into rings.
  3. Beat the egg with three spoons of chilled water, pepper and salt – just so that the white and yolk do not turn into foam.
  4. “Tomatoes” (tomatoes in Transcarpathian dialect) cut crosswise on top, immerse in boiling water, then cover with cold water and remove the skin. Divide the pulp into equal small pieces.
  5. Lubricate the pan with fragrant homemade oil, heat it and lay out the onion halves, fry for up to 6 minutes.
  6. Add pieces of bell peppers and keep it all on fire.
  7. We lay out juicy tomatoes, constantly stirring, add an egg. We bring the process to completion in about 3 minutes.
  8. Garnish with greens (dill, parsley, chives) and serve.

Lecho for those who like smoked aroma and meat taste

It’s simple: together with peppers, stew a “picnic” or any delicious sausage and lard.

If you want the family to enjoy the dish in autumn or winter, you can preserve “lecho”, but without meat components and eggs

Thus, on cold days, you can enrich your body with necessary vitamins. The set of products here will be the same as in the vegetarian version, and you can add vinegar, sugar, and black pepper to this recipe.

  1. The preparation of vegetables is the same, but here the pepper will look good in the form of sticks or plates. We recommend cleaning peppers from seeds.
  2. We add dried herbs, salt and some spiciness, for example, chili, to the vegetable mixture. Cook for an hour. Do not forget to stir every 30 minutes.
  3. At the end of cooking, vinegar should be added, the lecho should be packaged in cans (capacity 0,5-1 liter) and fixed with screw caps or rolled up.

Prepared “Transcarpathian ratatouille” can be served with potatoes, pasta or fish. Also, “lecho” looks good as a separate snack on your festive table.
