Lemon eclairs

If you feel a special culinary inspiration and want to surprise your relatives with a delicious recipe, we suggest baking lemon eclairs in our version.

Lemon eclairs – ingredients

  • flour – 150 g.
  • butter – 100 g.
  • chicken eggs – 3 pcs.
  • sugar – 1 pinch.
  • sea ​​salt – 1 pinch.
  • For caramel:
  • lemons – 2 pc.
  • sugar – 150 g.
  • For the cream:
  • lemons – 2 pc.
  • butter – 175 g.
  • egg yolks – 5 pcs.

Lemon eclairs – recipe

Preheat the oven to 180 ° C.

Prepare the dough: sift the flour through a sieve twice; sifting a second time, add a pinch of salt and sugar.

Melt 85 g of butter in 180 ml of hot water, add sifted flour and mix until smooth.

Beat the eggs slightly and add them to the flour and butter in small portions, stirring continuously until the dough becomes smooth and shiny.

Grease a baking sheet with butter and, forming cakes, spread the dough with a tablespoon, first dipping it in cold water so that the dough does not stick to it.

Bake eclairs for 15 minutes in a preheated oven, then reduce the temperature to 150 ° C and bake for another 10 minutes.

Grate the zest of 2 lemons on a fine grater, squeeze the juice from them.

Prepare the cream: grind 175 g of butter at room temperature with 125 g of sugar, add 5 yolks one at a time, add zest and juice of lemons, mix.

Heat the cream in a water bath, stirring it continuously so that the yolks do not curdle. When the cream thickens, rub it through a sieve. Cut eclairs on the side and fill them with cream.

From the remaining two lemons, use a vegetable peeler to remove the zest in long, thin strips.

Prepare caramel: pour sugar into a deep pan, moisten it with water and put it on fire. When the sugar dissolves, add the chopped lemon zest and continue heating over low heat until the caramel thickens.

Decorate eclairs with ready caramel.
