Disassemble the herring, carefully removing the bones and skin (you can buy a ready-made fillet). Cut medium-sized fish into slices.
Grate raw carrots on a large grater or on a Korean carrot grater. Cut the onion into half rings, and clean the mushrooms and cut them into thin slices.
Fry the mushrooms in oil over medium heat. It is not necessary to keep it for a long time – the mushrooms should remain soft, and not heavily fried. Do not add salt, mix only 1-2 times. So the Lithuanian salad with herring and mushrooms will be more tender and not watery.
Remove the mushrooms from the pan and fry the carrots and onions in it until soft.
We wait for the vegetables to ripen (you can put them in the refrigerator for half an hour) and mix them with mushrooms. Do not remove the oil from the pan – it will be the dressing for the Lithuanian herring and mushroom salad.
