Laurentian pie with chicken and mushrooms – ingredients

  • For the dough:
  • Oil – 50
  • Egg – 1 pcs.
  • Cold water – 3 tbsp.
  • Flour – 200 g.
  • Salt – ½ tsp.
  • For the filling:
  • Chicken fillet – 1 piece (250-300 g).
  • Fresh mushrooms – 400-500 g.
  • Onion – 1 piece (medium size).
  • Salt, pepper – to taste.
  • Oil – 3-4 tbsp.
  • To fill:
  • Hard cheese – 150 g.
  • Cream from 20% – 200 ml.
  • Eggs – 2 pieces.
  • Nutmeg – 1 tsp.

Laurentian pie with chicken and mushrooms – preparation

Grind the solid butter from the refrigerator on a coarse grater, add the egg, and mix. It is not worth trying to make the mass homogeneous. Add cold water, salt, gradually add flour, knead the dough.

The dough should be elastic and not stick to your hands. Wrap the dough in cling film and put it in the fridge for 30-40 minutes.

Boil the chicken fillet until ready. Cool and cut into small pieces. Cut the onion into cubes, send it to a heated pan, fry until soft. Cut the mushrooms into small pieces, add them to the onion, fry for 6-8 minutes, add the chicken, salt and pepper, simmer everything together for a few more minutes. Leave the filling until completely cooled.

Now let’s do the filling. Beat eggs, add cream, mix. Grate the cheese on a fine grater, add it to the cream-egg mixture, add nutmeg, mix everything well. You can add a little salt, but it is not necessary.

Take the dough out of the refrigerator, roll it out and put it in a mold (26 cm), forming the sides. Spread the filling, pour the filling evenly on top.

We put the cake in an oven heated to 180 degrees for 30-40 minutes (focus on your oven).
