The recipe for Lviv cheesecake
- For cheesecake:
- homemade cheese – 1 kg.
- chicken eggs – 6 pieces.
- sugar 250 g.
- butter – 150 g.
- zest of one lemon.
- sour cream – 40 ml.
- raisins – 70 g.
- semolina (or flour) – 30 g.
- starch – 20 g.
- vanilla extract – 1 tbsp.
- For the chocolate frosting:
- dark chocolate – 100 g.
- butter – 60 g.
- cream – 20 ml.

Homemade cheese should be rubbed through a sieve or ground through a meat grinder, the cheese mass should be homogeneous, without lumps.
Put half of the cheese in the bowl of a mixer, add finely grated lemon peel and a third of sugar, pour semolina and starch. Start whipping at low speed (it is best to use the “scraper” nozzle). Gradually introduce all the cheese and pour all the sugar. Mix until a homogeneous mass.
In parts, add soft butter. Mix everything thoroughly. Add vanilla. Add the eggs one at a time, mixing the curd mass well at low speed to a uniform consistency. Add sour cream. At the end, add raisins and mix everything well.
Bake in a hot oven at a temperature of 200 degrees (on medium heat) for 40-50 minutes.
Cool the baked cheesecake for 2-3 hours, then put it in the refrigerator for 2-3 hours.
Lviv cheesecake: preparation of chocolate coating
For watering, you need to heat the cream. Melt the chocolate in a water bath.
Pour the cream into the chocolate, mix thoroughly until smooth. Add warm butter. Mix thoroughly. The chocolate sauce is ready.
Pour the chocolate glaze over the cold cheesecake. Put in the refrigerator until the frosting completely hardens.
