Baked meat in the oven, with garlic and marjoram – ingredients

  • A piece of neck (without bone) – about 1,5 kg.
  • Salt – 3 tsp.
  • Garlic – 8 cloves (large).
  • Marjoram – 3-4 tbsp.
  • Ground black pepper – 1 tbsp.
  • Lard – 1 tablespoon (can be replaced with oil).

Wash the meat and dry thoroughly with paper towels. We cut off the protruding parts, tie with a strong thread, form a neat “briquette” of meat.

Finely chop the garlic, put it in a mortar, add salt, pepper and marjoram, rub everything well together until smooth.

Carefully rub the meat with the resulting paste (rub the paste into the meat, as if doing a massage). We tightly wrap the meat with cling film, put it in the refrigerator for 24 hours (the meat can be marinated like this for 2-3 days).

We take the meat out of the refrigerator, unroll the film.

Heat lard in a large pan. We fry the meat on all sides (this step must be taken very seriously so that the meat is nicely browned on all sides) over high heat to close the pores.

We put the meat in a baking dish, put it in an oven heated to 150 degrees. We bake for 2 hours, during this time we turn the meat 3-4 times, and each time we pour the liquid that is released during baking.

After baking, remove from the oven, leave to cool, wrap in parchment, send to the refrigerator for 5-6 hours.

We remove the thread, cut the meat.
