Milky Way Walnut Cake

Milky Way Walnut Cake – an interesting holiday cake. A fairly strong alcohol-coffee impregnation makes it, of course, a cake for an adult company (although by replacing alcohol and coffee with cocoa, you can serve it to children as well). An interesting combination of different creams, chocolate dough, alcohol-coffee aroma and nuts makes this cake a culinary miracle. Try it!

Milkyway nut cake – ingredients

  • For bіskvіtu:
  • Eggs – 8 pieces.
  • Sugar – 280 g.
  • Flour – 160 g.
  • Cocoa – 40 g.
  • Baking powder – 1 tsp.
  • For impregnation:
  • Instant coffee – 3 tbsp.
  • Hot water – 250 ml.
  • Chocolate (or coffee liqueur) – 200 ml.
  • For milk cream:
  • Milk – ½ cup.
  • Sugar – 1 cup.
  • Vanilla sugar – 20 g.
  • Dry milk – 2 cups.
  • Oil – 250
  • For the nut cream:
  • Walnuts, ground – 200 g.
  • Sugar – ½ cup.
  • Milk – ½ cup.
  • Oil – 250
  • Additionally:
  • A few halves of nuts.
  • Grated chocolate.
  • Thick cherry jam.

Milky way nut cake – recipe

Sponge cake

Separate the whites from the yolks, beat until stiff foam. Add sugar one spoon at a time, beat well after each portion of sugar. Add yolks one by one, beat at the lowest speed of the mixer.

Mix the flour with cocoa and baking powder, sift to the egg mass, carefully mix with a spatula.

Cover the bottom of the mold (d=26 cm) with parchment, pour the dough, level it. Bake at a temperature of 180 degrees for 35-40 minutes. Leave to cool, cut into 3 cakes.

Dilute coffee in hot water, cool, add alcohol, divide into three parts and soak each cake.

Milk cream

Bring milk with sugar and vanilla sugar to a boil and boil for about 3 minutes. Leave to cool.

Beat the butter to a light creamy mass, slowly pour in the cooled milk, beat well. Add dry milk in several portions, beat until a thick mass is obtained.

Nut cream

Bring milk and sugar to a boil, add ground nuts, mix well, and boil. Leave to cool.

Beat the butter to a light, fluffy mass, add 2-3 spoonfuls of the milk-nut mixture. Beat well every time.

We collect the cake

Spread the soaked cake with half of the dairy cream, cover with the second soaked cake, spread with nut cream, cover with the third soaked cake, spread with the rest of the milk cream. Decorate with nuts, cherry jam and grated chocolate.
