  • Eggs – 3 pieces.
  • Sugar – ¾ cup.
  • Flour – ½ cup.
  • Starch – 1 tbsp.
  • Salt – a pinch.

  • Cheese (twice ground, without grains) – 500 g.
  • Powdered sugar – ¼ cup.
  • Jelly (raspberry) – 1 package.
  • Water – ½ cup.
  • Cream (from 30%) – 125 ml.
  • For coconut mass:
  • Cream (from 30%) – 250 ml.
  • Gelatin – 2 tsp.
  • Water – 2 tbsp.
  • Powdered sugar – 1 tbsp.
  • Coconut flakes – 3 tbsp.
  • Additionally:
  • Polish jelly NIEBIESKA – 1 package (or any other jelly).
  • Water – 350 ml.
  • Candies Bird’s milk.

Sponge cake

All the ingredients for the biscuit should be at room temperature.

Separate the proteins from the yolks. Beat the egg whites together with salt to a stable foam, add sugar one spoon at a time, beat well each time. Set the mixer to the lowest speed, add yolks one at a time.

Mix flour with starch, sift to egg mass. Carefully knead with a spatula.

Line the bottom of the form (24×24) with parchment. Pour out the dough, level it.

We bake the cake at a temperature of 160 degrees for 30-40 minutes. Cool the finished biscuit, cut it into 2 layers of cakes.

Curd mass

Dissolve the jelly in hot water, leave to cool.

Whip the cream to a soft creamy mass, add powdered sugar, mix well. 1-2 tbsp. add cheese, beat until smooth. Add the cooled jelly, beat again until smooth.

We put the cake, cut side up, back into the form (lined with parchment). Spread a third of the cheese mass on the cake, level it. We lay out “Bird’s milk” candies in rows, corner down. Cover the candies with the rest of the cheese mass, level them, cover with the second cake. We send it to the refrigerator.

Coconut mass

Dissolve gelatin in hot water, leave to cool.

Beat the well-chilled cream with powdered sugar to a lush, thick cream.

Add a few spoonfuls of whipped cream to the gelatin, mix well, pour the hardened gelatin into the cream, beat well. Add coconut shavings, quickly knead and immediately transfer the mass to the cake, level it.

***Note. The mass thickens quickly.
