New Year’s menu. Meat dishes – Stuffed chicken

We free the chicken from the bones so that only the meat remains inside the chicken. This is not difficult to do. We leave the wings as they are, do not touch them.

For the marinade, mix pineapple juice, soy sauce and black pepper, put the chicken in it and leave to marinate for 2-3 hours (you can overnight).

Mix the minced meat with all the ingredients for the filling. Tie the neck of the chicken well with cooking thread (or sew it up) so that the filling does not come out. Fill the marinated chicken with half of the minced meat through the bottom hole, place three hard-boiled eggs right in the middle, one after the other, fill the chicken with the remaining filling. We do not forget about the legs, we also fill them with stuffing. We sew up the bottom hole, cross the legs and tie.

Dry the surface of the chicken with a paper towel and place it on oiled foil. Lubricate the chicken well with 2 tbsp. sour cream and put in an oven heated to 190 gr. for 1,5 hours. After 0,5 hours of baking, grease the chicken again with 1 tbsp. sour cream After another 20 minutes of baking, brush the chicken with melted butter – 2 tbsp. Cook the chicken until golden brown, if the chicken starts to burn a little by the end of baking, you can cover it with foil. Similarly, if the wings start to burn during baking, they will also need to be covered with foil. After the chicken is ready, take it out of the oven and let it “rest” for 10-15 minutes, and then you can cut and serve. During this time, the juices inside will be evenly distributed, and the filling will “seize”.

Peel and chop the garlic. Wash the rosemary, dry it, separate the leaves from the branch. Place garlic, rosemary leaves, 0,5 tsp. salt and 1 tsp. ground pepper in a blender. Beat until smooth. While continuing to beat, pour olive oil.

Wash the ribs, put them in a bowl, pour in the prepared marinade. Mix thoroughly, cover and refrigerate overnight.

The next day, wash the tomatoes, cut each one in half. Wash and dry the tarragon.

Remove the meat from the marinade. Heat a large frying pan and fry the ribs over high heat for 5 minutes. on each side. Transfer to a plate, cover with a sheet of foil and leave for 10 minutes.

Add 2 tbsp. to the pan where the ribs were fried. marinade and fry the tomatoes, stirring occasionally, for 5 min. Salt, pepper. Add the sprigs of tarragon to the tomatoes, mix and cook for 2 minutes.

Return the meat to the pan, stir, heat for 2 minutes. Transfer to a plate and serve.

Heat the oven to 170 ° C. Wash, dry and rub the thighs with salt and pepper on all sides.

Peel the ginger and garlic and rub on a grater.

Pour cream into a baking dish, add honey, ginger and garlic, a little salt and pepper to taste. We put it in the oven to warm up.

Place a non-stick frying pan over medium heat. Put the thighs with the skin down, fry for 5 minutes. Carefully turn over so as not to damage the skin, fry for 2 minutes.

Transfer the fried thighs to the form with the sauce, cover with foil, put in the oven for 25 minutes. until ready.

Preparation of marinade for meat: In a small container, mix oil, soy sauce, lemon juice, and mustard. Mix everything well.

Meat (a whole, fresh piece) is soaked in a salt solution and washed well under running water. Make cross cuts every 2-4 cm. Marinate in previously prepared marinade. Each cut is well salted, smeared with a mixture of peppers and finely chopped garlic. Cover the container with meat with cling film and put it in the refrigerator overnight.

You can cook the next day. We take a baking dish, cover it with foil and grease the foil with oil. We cut the potatoes into plates and make a pillow for the meat. Put the marinated meat on the potatoes. We put pre-cut tomatoes, mushrooms and cheese into each cut. Heat the oven to 180 degrees. Wrap the meat in foil and bake for about 1 hour. Then we take out the meat accordion, open it and return it to the oven to brown. Another 25-40 minutes.

The meat accordion is ready. We serve a hot dish on the table, having previously cut it into portions. Each serving contains a piece of meat, tomato, and cheese. The dish can be decorated with greens.
