Nizhinsky cucumber salad is a classic recipe – an old recipe that was used by more than one generation of housewives. For such a recipe, any cucumbers are suitable, even overgrown cucumbers.

Nizhinsky cucumber salad – classic recipe – ingredients

  • Cucumbers – 1,5 kg.
  • Onion – 700 g.
  • Dill – 20 g.
  • Salt – 1,5 tbsp.
  • Sugar – 2 tbsp.
  • Oil – 75 ml.
  • Vinegar (6%) – 75 ml.

Cut the cucumbers into rings (or half rings, if they are large).

Cut the onion into half rings (or quarter rings), add to the cucumbers.

Wash the dill well and finely chop it, add it to the cucumbers.

Add salt, sugar, oil, vinegar, mix everything well, leave for 1,5 hours.

At the bottom of the cans (0,5 l) we put 2 pieces of allspice, a small bay leaf (you can do without it). Transfer the salad to jars. From the presented products, 5 cans of 0,5 l are obtained.

Place a clean strong cloth on the bottom of a large pot (such as to fit the jars), place the jars (covered with lids), pour water (up to the shoulders). Sterilize 10 minutes after boiling.

We take the cans out of the pan, tightly twist them, turn them upside down, wrap them with a warm blanket, and leave them to cool.
