Nut patch

Today we will bake a delicious and tender nut cake. Nut cakes, as in esterhaz, in combination with biscuit and butter cream, go very well together and complement each other.

Nut cake – ingredients

  • For biscuit
  • Flour – 4 tbsp.
  • Cocoa – 2 tablespoon
  • Eggs – 6 pieces.
  • Sugar – 6 tbsp.
  • Baking powder – ½ tsp.
  • For nut cakes
  • Flour – 3 tbsp.
  • Squirrels – 8 pieces.
  • Sugar – 1 cup.
  • Nuts – 200 g.
  • Cinnamon is at the tip of a knife.
  • Cream for nut cakes
  • Yolks – 2 pieces.
  • Sugar – 6 tbsp.
  • Starch (corn) – 1 tbsp.
  • Flour – 1 tbsp.
  • Milk – 1 glass.
  • Oil – 150
  • Butter cream
  • Cream (fat) – 300 ml.
  • Powdered sugar – 4 tbsp.

Walnut cake – preparation

Let’s start with the preparation of sponge cakes. Pour the eggs into the blender bowl, add sugar and beat until the mass turns white.

Sift flour and mix with cocoa and baking powder. Carefully mix the dry and liquid ingredients. We cover the form (40×30) with baking paper, spread the dough, level it. Bake until ready at a temperature of 180 degrees. Cool the finished cake, cut it in half.

Now we will prepare nut cakes. We clean the nuts and grind them in a meat grinder. Mix ground nuts with flour and cinnamon.

Beat the egg whites at maximum speed, adding sugar little by little, until thick, strong peaks. Carefully introduce proteins into the nut mixture. Mix very carefully.

Divide the finished dough into 2 parts. Bake two cakes (40×30) at a temperature of 150 degrees until light brown for 15-20 minutes. Cut each cake in half after cooling.

Now we will prepare the cream for nut cakes. Grind the yolks with sugar, add starch and flour, pour in milk and beat until smooth. Put on the lowest fire. Stirring constantly, cook until thickened. Remove from heat, leave to cool.

Beat the butter until white, add custard a spoon at a time, continue beating.

Next, we prepare the cream. Whip cream with powdered sugar until thick.

All the components of the bread are ready, we assemble the cakes together. Place a chocolate biscuit on the bottom, spread with half of the cream. Next, we lay out the nut cakes on top of each other, spread them with custard cream. Spread the rest of the cream on the last nut cake and cover with chocolate cake.

We leave the braid for 3-4 hours. And we cut the parts for tasting.
