Orange cake

Fragrant and tasty, rich cake will decorate your holiday. You can decorate the cake with orange slices, coconut shavings, whipped cream.

Ingredients for making orange cake:

  • for the biscuit:
  • flour – 150 g.
  • chicken eggs – 4 pcs.
  • corn starch – 35 g.
  • sugar – 120 g.
  • freshly squeezed orange juice – 75 ml.
  • cookie powder – 2/3 tbsp.
  • orange peel – to taste.
  • for impregnation:
  • orange liqueur – 2 tbsp.
  • freshly squeezed orange juice – 100 ml.
  • sugar – 2 tbsp.
  • for the cream:
  • freshly squeezed orange juice – 250 ml.
  • corn starch – 2,5 tbsp.
  • cream 33-35% – 150 ml.
  • condensed milk – 190 g.
  • orange peel – to taste.
  • For the icing:
  • butter – 5 tbsp.
  • white chocolate – 150 g.

Making an orange cake

Combine flour, starch and cookie powder, sift.

Beat the whites, adding a pinch of salt, gradually add sugar. Beat the whites into a nice, thick foam. Add the yolks one at a time, add the peel of one orange.

Turn off the mixer and pour a little hot (almost boiling) orange juice into the beaten eggs with a thin trickle, add 1/4 of the flour mixture. Mix everything carefully with a spatula from the bottom up. So we alternately introduce juice and flour, carefully stirring with a spatula so that the egg mass does not fall.

Put the dough in a mold, put it in an oven heated to 180 degrees and bake for 25-30 minutes. Cut the finished biscuit into three cakes.

For the cream, mix freshly squeezed orange juice with starch, mix, put on medium heat, stir constantly. As soon as the mass thickens, add condensed milk and boil over low heat until the mass thickens again. It will take about 10 minutes. Remove the resulting cream from the heat, pour it into another container, tightly press the surface of the cream with cling film so that a crust does not form, and put it in a cool place to cool.

Whip the cream to a nice, thick foam and carefully add it to the cold cream together with the zest.

To impregnate the cakes, mix orange juice with sugar, cook for 10 minutes, add liquor.

We collect orange cake: we put one cake in a cake ring. Soak it and spread 1/2 orange cream. Cover with the second cake, soak it as well and spread the cream on top. Cover with the third cake. Melt the chocolate with butter in a water bath and pour over the glaze orange cake.
