Let’s prepare for Easter not only our traditional Easter, but also the Dutch Easter – paasbrod. The Dutch prepare such paska in advance and enjoy it on Easter Sunday. The delicate taste of the muffin and the unsurpassed filling will amaze you.

Paasbrod – ingredients

  • For the dough:
  • Wheat flour – 500 g.
  • Milk – 250 ml.
  • Yeast – 7 g.
  • Butter – 50 g.
  • Chicken eggs (for dough) – 1 pc.
  • Sugar – 10 g.
  • Yolks – 2 pcs. (for greasing the dough).
  • A pinch of salt.
  • For the filling:
  • Egg yolk – 2 pcs.
  • Sugar – 150 g.
  • Almonds (not roasted) – 150 g.
  • Hazelnuts – 100 g.
  • Candied fruit – 200 g.
  • Raisins – 200 g.
  • Vanilla sugar – 1 bag.
  • Powdered sugar (for decoration).

Recipe for paasbrod

Let’s start cooking paasbroda. Let’s prepare the dough. Melt the butter, add sugar, salt, egg, warm milk (no higher than 40 degrees) and mix everything thoroughly. Mix yeast with flour. Now gradually introduce the flour into the egg mixture, stirring thoroughly and knead the dough. Cover the mixed dough for paasbroda cling film and leave in a warm place for 1 hour to set.

While the dough is suitable, we will deal with the filling for paasbroda. Pour boiling water over almonds and leave for 5 minutes. After that, it will be very easy to peel it. Dry the almonds from the remaining water and grind them into crumbs using a blender. Add sugar, vanilla sugar and 2 egg yolks. Mix everything thoroughly and divide into two parts. Make flat strips from the filling, cover with cling film and refrigerate for 30 minutes. Stuffing for paasbroda ready.

Now let’s prepare the dressing for the dough paasbrod. Pour boiling water over the raisins for 10 minutes and drain the water. Add chopped candied fruit and hazelnuts to the raisins.

During this time, the dough will double in size. Add dried fruits and hazelnuts to it and distribute evenly over the dough.

Divide the dough for paasbroda into two equal parts. Roll out and put the almond filling in the center of each part and wrap the edges.

Place the dough seam side down on a parchment-lined baking sheet and let it rise for 20 minutes. Brush with egg yolks and bake the paasbrod in a preheated oven at 180 degrees for 30-40 minutes until golden brown.

Finished paasbrod cool and sprinkle with powdered sugar.
