Pear cake with white chocolate

A very delicate airy fruit cake with a pear will be a great addition to dinner. It is best to choose soft ripe juicy pears, because green fruits will not give a rich taste and aroma. Instead of grappa, you can use brandy or cognac.

Pear cake with white chocolate – ingredients

  • Ripe pears – 2 pcs.
  • White chocolate – 100 g.
  • Lime or lemon – ½ pc.
  • Powdered sugar – 50 g.
  • Brown sugar – 2 tbsp.
  • Grappa (Italian grape alcoholic drink) – 2 tbsp. l.
  • For the syrup:
  • Sugar – 5 tbsp. l.
  • For the dough:
  • Flour – 1 ½ cups.
  • Chicken eggs – 3 pc.
  • Butter – 110 g.
  • Cream – 150 ml.
  • Baking powder – 1 tsp.
  • Sea salt – 1 pinch.

Pear cake with white chocolate – recipe

Preheat the oven to 190 ° C. Peel the pears and, after removing the core, cut them lengthwise into large plates.

Squeeze juice from half a lime. Place the pears in a bowl, sprinkle with lime juice, sprinkle with brown sugar and pour over the grappa. Let it stand for a while, then drain the grappa with the juice and keep it.

Prepare syrup: 5 tbsp. spoon of sugar pour 5 tbsp. spoons of water, put on fire and cook until sugar is completely dissolved and light caramel color.

Melt 100 g of butter, then cool.

Chop the chocolate into small pieces. Beat the eggs with salt with a mixer, pour in the cream and beat a little more. Add melted butter, beat, then add 1 cup of flour, baking powder and knead everything with a whisk. Pour sugar syrup, grappa and pear juice into the dough and mix with a spatula.

Pour in the remaining flour, mix everything (the dough should not be too thin). Line a removable form with baking paper, grease with butter, lay out the pears, sprinkle with chopped chocolate and pour the dough over everything. Bake the cake in a preheated oven for 45 minutes.

Cool the finished cake and sprinkle with powdered sugar.
