Pie with cherry tomatoes and feta – ingredients

  • Unleavened puff pastry – 1 layer.
  • Cherry tomatoes – 12 pcs.
  • Feta cheese – 100 g.
  • Egg yolks – 1 pcs.
  • Flour – 1 tsp.
  • Sea salt – 1 pinch.
  • For the pesto sauce:
  • Pine nuts – 1 handful.
  • Parmesan cheese – 70 g.
  • Lemons – 0,5 pcs.
  • A large bunch of parsley – 1 pc.
  • Fresh basil – 1 bunch.
  • Garlic – 1 clove.
  • Extra Virgin olive oil – 3 tbsp. l.

Cooking a pie with cherry tomatoes and feta

Preheat the oven to 200 ° C. Defrost the dough beforehand.

Dry the pine nuts on a heated pan. Grate the cheese on a fine grater.

Clean the garlic, crush it with the flat side of a knife and remove the bitter core. Cut parsley and basil leaves. Squeeze juice from half a lemon.

Prepare the pesto sauce:

In the bowl of a blender, combine dried nuts, garlic, pour olive oil, lemon juice, add parsley and basil, grated cheese and grind everything.

Dust the work surface with flour, roll out the dough into a rectangle and place it on baking paper (parchment). Stepping back one and a half centimeters from the edges and without cutting through the dough, use a knife to draw a rectangle of a smaller area so that the sides come out.

Cut cherry tomatoes in half. Cut the feta into small pieces. Coat the inner rectangle with a thin layer of pesto sauce, lay out tomato halves, and feta on top.

Mix the yolk with salt and grease the sides of the dough. Place the cake on a baking sheet and bake in a preheated oven for 12-15 minutes, then cool.
