Pie with plums and peanuts

September brings delicious fruits that are easy and simple to add to baking. Both adults and children like this fruit filling. Sweet, ripe plums are best for the recipe. Peanuts can be replaced with any roasted nut – hazelnut, walnut, cashew.

Pie with plums and peanuts – ingredients

  • 2 eggs
  • Sugar 1 cup.
  • Kefir 1 glass.
  • Roasted peanuts 250 g.
  • Soda 0.5 tsp
  • Salt 1 pinch.
  • Vanillin 1 pinch.
  • For the filling:
  • Large plums 8 – 10 pcs.
  • Sugar 1 tbsp.
  • For the form:
  • Vegetable oil 1 tsp.
  • Wheat flour 1 tsp.

Pie with plums and peanuts – recipe

Beat the eggs with sugar, salt and vanilla. Pour kefir, mix. Crush the peanuts into crumbs. Set aside about 1/4 of the peanut crumbs. Pour most of the crushed peanuts into the egg-kefir mixture, mix. Add sifted flour and baking soda to the bowl, mix.

Wash the plums, dry them. Cut the plums in half and remove the pits. Cut a small part of the plums into small pieces and add to the dough. Mix gently. Lubricate the baking form with oil, sprinkle with flour. Pour the dough into the mold. Place plum halves on top of the dough.

Combine the reserved peanuts with sugar (1 tablespoon) and sprinkle the surface of the cake between the plums. Place the cake pan in the oven heated to 180 degrees. Bake for 45-50 minutes. Remove the finished cake from the oven. Carefully remove from the mold onto a wire rack and let cool completely. Put the cake on a plate. Serve pastries with tea or coffee, cut into pieces.
