Cabbage pies – ingredients
- For the dough:
- Flour – 500 g.
- Whey – 300 ml (or milk – 250 ml + 50 ml of water).
- Oil – 80
- Yeast – 7-8 g (2 teaspoons).

- Sugar – 1 tbsp.
- Salt – 1 tsp.
- For the filling:
- Cabbage – 700 g.
- Onion – 200 g.
- Green is a favorite.
- Salt, pepper – to taste.
- Oil.
- Additionally:
- Flour for dough processing.
- Oil for lubricating the mold.
- Egg – 1 piece (for greasing pies).

All the ingredients for the dough on cabbage pies should be at room temperature.
We heat the serum slightly (no more than 35 degrees).
Let’s start cooking cabbage pies by preparing the broth. Add yeast, sugar, 50 tsp. to 2 ml of whey. flour, mix well, leave for 15 minutes in a warm place.
Melt the butter, let it cool.
Add sugar to the remaining whey.
Beat the egg with a fork.
Sift the flour, make an indentation, pour out the diluted yeast, add the egg and the rest of the whey, mix well with a spoon, leave for 15-20 minutes.
Add salt to the melted butter. Pour the butter into the dough in several batches, mix well.
Transfer the dough to a floured worktop, knead well (about 10 minutes). If necessary, sprinkle with flour. Grease the pan with oil, spread the dough, grease the dough with a little oil on top, cover with a towel, put the dough in a warm place for 1-2 hours (the dough should double in size).
Knead the dough, cover with a towel, let rise again in a warm place (about 50 minutes).

Cut the onion into small cubes. Chop the cabbage.
Fry onions in heated oil until soft, add cabbage. Fry everything together while stirring. At the end, salt the cabbage, add your favorite greens.
Divide the dough into the desired number of parts. From each piece of dough, we form a patty with our hands, spread the filling, pinch the pie.
We put the pies on a form (lined with parchment or greased with oil) with the seam down.
Cooking cabbage pies let it stand for another 15-20 minutes in a warm place. Brush them with a beaten egg. Bake in an oven heated to 200 degrees for about 25 minutes.
