Pineapple and poppy seed cake

Pineapple and poppy seed cake – lush and moderately sweet. Such a delicate, slightly sour braid will be a decoration of any table.

Pineapple and poppy seed cake – ingredients

  • For bіskvіtu:
  • Eggs – 4 pieces.
  • Sugar – 4 tbsp.
  • Flour – 4 tbsp.
  • Baking powder – ½ tsp.
  • For the poppy seed cake:
  • Squirrels – 4 pieces.
  • Sugar – 3 tbsp.
  • Flour – 1 tbsp.
  • Starch – 1 tbsp.
  • Poppy seeds – 3 tbsp.
  • For the cream:
  • Cream (from 30%) – 500 ml.
  • Lemon jelly – 2 packages.
  • Water (boiling water) – 600 ml.
  • Pineapple – 1 can.
  • Additionally:
  • Plum jam.
  • Chocolate.

Sponge cake

Separate the yolks from the proteins. Beat the egg whites until thick foam, add sugar one spoon at a time. Beat well after each portion of sugar. Add yolks one by one, beat at the lowest speed of the mixer.

Mix the flour with the baking powder, sift it to a lush egg mass, carefully mix it with a wooden spoon.

Cover the bottom of the mold (24×24 cm) with parchment, pour the dough, and level it. We bake the cake at a temperature of 180 degrees for 20-25 minutes. We are cooling.

Beat cold egg whites until thick foam, add sugar one spoon at a time. Beat well after each portion of sugar. Mix the flour with poppy seeds, add portions to the proteins, mix gently.

We put the dough in a form with parchment, bake for 20-25 minutes. We are cooling.

Cream

Dissolve the jelly in hot water, set aside in a cold place until it thickens slightly.

Drain the pineapples and cut them into small cubes.

When the jelly begins to thicken, whip the well-chilled cream to a thick lush cream. Add the thickening jelly in portions, do not stop beating.

Add chopped pineapple, mix.

Immediately spread the cream on the biscuit, level it. Cover the cream with a poppy seed cake, pressing slightly. Put the dough in the refrigerator for 2-3 hours.

Spread the top cake with plum jam and sprinkle with grated chocolate.
