Pliatsok Garatanets with peaches

Pliatsok Garatanets – a multi-layer cake with shortcrust pastry, cottage cheese, protein layer and peaches. The patty is not folded, but baked in one cake. A good baking option for those who do not like cream pies.

Garatanets is very easy to prepare and always succeeds.

Pliatsok Garatanets – ingredients

  • For the dough:
  • Flour – 3 cups.
  • Sugar – ½ cup.
  • Yolks – 2 pieces.
  • Oil – 200
  • Baking powder – 2 tsp.
  • Sour cream – 3 tbsp.
  • Cocoa – 2 tablespoon
  • For the cheese mass:
  • Cheese – 500 g.
  • Yolks – 4 pieces.
  • Powdered sugar – ¾ cup.
  • Oil – 100
  • Starch – 1 tbsp.
  • Vanilla sugar – 20 g.
  • Additionally:
  • Squirrels – 6 pieces.
  • Sugar – 1 cup.
  • Peach jelly (powder) – 1 package.
  • Peaches – 1 can (850 g).

Mix flour with sugar and baking powder, add solid butter cut into cubes. Cut the butter with flour with a knife until the butter crumb is formed.

Add egg yolks and sour cream to the butter crumbs, knead the dough. Divide the dough into 3 parts, add cocoa to one, mix.

Wrap each piece of dough in cling film, put in the freezer for 30-40 minutes.

Curd mass

Grind the cheese in a meat grinder 2-3 times.

Beat the butter with powdered sugar to a light, fluffy mass, add the yolks one by one (the next yolk is added only when the previous one is completely combined with the butter mass). Gradually add cheese and starch, mix everything well.

We make a braid

Drain the peaches from the syrup, cut into small cubes.

Cover the form (25×30) with parchment. On the bottom of the mold, rub a piece of light dough and about a quarter of the second piece of light dough on a coarse grater.

Place half of the chopped peaches on top of the grated dough, and spread the brown dough on top of the peaches. Carefully spread the cheese mass on top, level it, and spread the rest of the peaches.

Beat the egg whites to a stable foam, add sugar one spoon at a time, beat well after each portion of sugar, add jelly, briefly beat until the ingredients are combined. Spread the resulting mass on top of the peaches, level it. Spread the rest of the light dough on top.

We bake the bread in the oven at a temperature of 190 degrees 45-50 degrees, until a “dry match”.

Turn off the oven, after 5 minutes, open the oven door. After 10-15 minutes, remove from the oven and leave to cool completely.
