Divide the ingredients for the biscuit in half and bake two separate cakes.

Separate the whites from the yolks, beat until stiff foam. Add sugar one spoon at a time, beating well each time. Add yolks one by one, beat at the lowest speed of the mixer.

Mix the flour with the baking powder, sift it to the egg mass, carefully knead it with a spatula.

We cover the form (25×35) with parchment, spread the dough, level it. Bake at a temperature of 170 degrees for about 20 minutes, until a “dry match”.

Bake the second cake in the same way. We are cooling. Soak both cakes with lemon juice and water.


Add flour, starch, eggs, lemon zest and juice to a glass of milk. Knead well so that there are no lumps of flour.

We put the rest of the milk on the fire, add sugar, bring it to a boil. Pour the previously prepared mass into the boiling milk. Cook, stirring constantly, until thickened. We transfer the hot cream into a ceramic dish, cover with cling film so that it touches the entire surface of the wheel. We are cooling.

Beat the butter until smooth, add the cooled custard in several portions, beat until smooth.

We collect the braid

Spread 2/3 of the cream on one of the cakes, cover with the second cake, spread the rest of the cream, level it, sprinkle with grated white chocolate.
