Plyatsok Freckle with apples and jelly

Plyatsok Vesnyanka – ingredients

  • For bіskvіtu:
  • Eggs – 4 pieces.
  • Sugar – 4 tbsp.
  • Flour – 4 tbsp. (with small slides).
  • Baking powder – 1/3 tsp.
  • Vanilla sugar – 1 tsp.
  • Salt – a pinch.
  • For the apple layer:
  • Apples – 7-8 pieces (medium).
  • Green jelly – 2 packages.
  • For the cream mass:
  • Cream (from 30%) – 400 ml.
  • Powdered sugar – 2 tbsp.
  • Red and green jelly – 1 package each.
  • Gelatin – 1,5 tbsp.
  • Hot water – 1/3 cup.
  • Additionally:
  • Yellow jelly – 1 package.
  • Gelatin – 1 tsp.
  • Water – 500 ml.

Freckle pie with apples and jelly – preparation

Jelly cubes

Dissolve red and green jelly in 250 ml of hot water (each). Pour into deep plates, cool and refrigerate until thickened.

Sponge cake

Beat the egg whites with a pinch of salt until thick foam at the highest speed of the mixer, add sugar and vanilla sugar one spoon at a time, do not stop beating. Beat until a lush, shiny, thick mass is formed, like meringue. Switch the mixer to the lowest speed and add the yolks one at a time.

Mix flour with baking powder, sift to egg mass. Carefully knead the dough with a spatula or a wooden spoon.

We cover the form (25×35) with parchment, spread the dough, level it. Bake at a temperature of 20-25 minutes (until a “dry match”). Cool, separate the parchment.

Jelly with apples

Peel the apples and remove the hard core, rub them on a coarse grater, put them in a pan, add 4-5 spoons of water, simmer until the volume is reduced by half.

Pour both green jellies into the hot apples, mix well, cool.

We cover the form with parchment, put a cake on the bottom, spread apple jelly on top, level it. Put the mold in the refrigerator until the apple mass is completely solidified.

Cream mass

Remove the hardened jelly (red and green) from the refrigerator, carefully remove it from the plates (separate it from the plate with a long knife), cut it into small cubes.

Dissolve gelatin in hot water, cool to room temperature.

Beat the well-cooled cream to a thick cream, add the powder, beat a little again. Add a tablespoon of cream to the gelatin, mix quickly. Pour gelatin into the cream, beat a little at the highest speed of the mixer.

Next, add jelly cubes to the cream, gently mix with a spoon. We spread it on the apple mass, level it and send it to the refrigerator.

Dissolve the last package (yellow) of jelly in hot water together with 1 spoonful of gelatin. Cool and put in the refrigerator, when the jelly barely hardens to the state of cream, spread it on top of a well-chilled cream layer, flatten it and send it back to the refrigerator for 5-6 hours.

Remove and cut with a knife dipped in hot water.
