  • For the dough:
  • Ground poppy seeds (dry) – 250 g.

  • Breadcrumbs – 1 tbsp.
  • Baking powder – 2 tsp.
  • Vanilla or almond flavoring.
  • For the cream:
  • Cheese (thrice ground) – 400 g.
  • Cream (from 30%) – 200 g.
  • Instant coffee – 1 tbsp.
  • Powdered sugar – 2 tablespoons (or according to your taste).
  • Gelatin – 3 tsp.
  • Additionally:
  • Currant jam.

Cakes

Separate the yolks from the whites. Beat the egg yolks with sugar to a light, fluffy mass, add liquid honey, beat again briefly.

Add poppy seeds, semolina, baking powder and breadcrumbs, mix with a spoon.

Beat the egg whites separately to a stable foam, carefully mix them into the dough.

Cover the bottom of the mold (d=22) with parchment, spread the dough. Bake at a temperature of 180 degrees for about 40 minutes. Cool, cut into 3 cakes.

Cream

Dissolve gelatin in a small amount of hot water, leave to cool. Dissolve coffee in 2 tbsp. water, cool.

Beat the well-chilled cream with powdered sugar to a thick lush cream, add cheese one spoon at a time, continue beating.

Add 2 tbsp. to the gelatin. cream mass, mix well. Pour hardened gelatin into the cream cheese mass, beat until smooth.

Set aside 3-4 tbsp. cream Divide the rest of the cream into 2 parts, add coffee to one, and beat again.

Spread the first cake well with currant jam, spread with white cream, flatten, cover with the second cake, spread with coffee cream, cover with the third cake.

Grease the top and sides of the cake with the reserved cream. We decorate according to our own wishes and preferences.
