Poppy crown

Poppy crown – soft, fluffy and very tasty yeast pastry. Such a whisk looks spectacular on the table, and the aroma is simply incomparable. Such pastries taste good with tea, coffee and hot milk. Try it!

Poppy crown – ingredients

  • For the dough:
  • Flour – 500 g.
  • Sugar – 40 g.
  • Eggs – 2 pieces.
  • Butter (melted) – 60 g.
  • Milk – 180 ml.
  • Salt – 1/3 tsp.
  • Fresh yeast – 20 g.
  • For filling
  • Ground poppy seeds – 250 g.
  • Honey – 80 g.
  • Raisins – 50 g.
  • Walnuts – 40 g.
  • Almonds – 30 g.
  • Vanilla sugar – 10 g.
  • Ground ginger – ½ teaspoon (optional).
  • Cinnamon – ½ tsp.
  • For the icing:
  • Powdered sugar – 5 tbsp.
  • Lemon juice – 2 tbsp.
  • Additionally:
  • Dried cranberries.

Poppy whisk – cooking recipe

Prepare the solution, grind the yeast with a teaspoon of sugar, pour half a glass of barely warm milk, add a spoonful of flour, mix. Cover with a towel and put in a warm place so that the solution rises (doubled).

When the solution has risen, add the rest of the ingredients to it, knead the dough. Cover with a towel and put in a warm place for about an hour. The dough should rise twice.

While the dough is “resting”, we prepare the filling.

Pour the ground poppy with boiling water, cover with a lid and leave to cool. Throw the poppy seeds on a clean cloth and squeeze out excess water. Add liquid honey, finely chopped or ground nuts, raisins, vanilla sugar, ginger and cinnamon. Mix everything well.

Knead the dough and divide it into 2 parts. We roll out each part into rectangles close to the size of 65×20 cm. Spread the poppy seeds evenly on the dough, roll them into rolls. Cut each roll in half lengthwise.

We take two halves of one tape measure and two halves of the other, weave one pair around the other, form a wreath. We glue the ends of the crown together.

We put the whisk on a form covered with parchment, leave it in a warm place for 20 minutes.

During this time, heat the oven to 180 degrees. Bake the wreath for 30-35 minutes. Remove, cool on a wire rack.

Mix powdered sugar with lemon juice, pour over the whisk, and sprinkle cranberries on top.
