Poppy seed on shortcrust pastry – ingredients

  • For the dough:
  • Flour – 3 cups.
  • Margarine – 250
  • Lard – 1 tbsp.
  • Baking powder – 2 tsp.
  • Sugar – 2 tbsp.
  • Vanillin – 1 tsp.
  • Yolks – 5 pieces.
  • For the poppy seed mass:
  • Poppy seeds – 600 g.
  • Milk – 1 l.
  • Oil – 150
  • Flour – 75 g.
  • Eggs – 7 pieces.
  • Sugar – 1,5 cups.
  • Honey – 4 tbsp.
  • Cocoa – 1,5 tablespoon
  • Dried fruits and finely chopped nuts – raisins, candied oranges, any sins.
  • Salt – a pinch.
  • Additionally:
  • Manka – 2 tbsp.
  • Protein – 1 piece.
  • Powdered sugar – 100 g.
  • Juice from a slice of lemon.

Makovnik on shortcrust pastry – preparation

Dough

Mix flour with baking powder, sugar and vanilla sugar, add margarine and lard, grind everything together to a fine crumb. Add yolks to the crumbs, knead a soft dough.

Divide the dough into two parts (1/3 and 2/3). The smaller part of the dough is wrapped in food film, the larger part is rolled out and placed in a form (25×35) lined with parchment. We lay out, form sides for 2/3 of the height of the form. Prick the dough with a fork and bake at 180 degrees for 15 minutes.

Poppy mass

Boil milk and pour poppy seeds with it. Bring to a boil, then boil for another three minutes, stirring constantly. Remove the pan from the heat, cover with a lid and leave for 3 hours. After that, drain the rest of the liquid, grind the poppy seeds three times in a meat grinder.

Separate the yolks from the whites and beat with sugar until a light, fluffy mass is obtained. Continuing to beat, add a spoonful of poppy seeds. When all the poppy seeds are combined with the yolks, add liquid honey, melted and cooled butter. Beat again, add cocoa and flour. Add dried fruits, candied fruit, nuts, mix.

Beat the egg whites with a pinch of salt to stiff peaks, carefully mix them into the poppy seed mass.

Sprinkle the baked cake with semolina, spread the poppy seed mass. Take the dough out of the freezer and rub it on top of the poppy seeds. Bake at a temperature of 180 degrees for 50-60 minutes.

After the poppy seed has completely cooled, cover it with glaze. Beat the whites, add sugar and lemon juice, the mass should be homogeneous, slightly thick, but easy to pour. Pour the glaze over the cake with a spoon.
