  • For the dough:
  • Flour – 3 cups.
  • Sugar – ¼ cup.
  • Milk – 3 tbsp.
  • Yeast (fresh) – 50 g.
  • Sour cream – 1 cup.

  • Salt – a pinch.
  • For the poppy seed mass:
  • Blue poppy – 200 g.
  • Milk – 2 glasses.
  • Liquid honey – 4 tbsp.
  • Sugar – ½ cup.

  • Oil – 50
  • Apple – 2 pieces.
  • Squirrels – 3 pieces.

Poppy mass

Bring milk to a boil, add poppy seeds, bring to a boil, remove from heat, cover with a lid. We leave the poppy until completely cooled. Drain the poppy seeds, beat well in a blender (ground in a meat grinder, grind by hand).

Add honey, sugar, melted butter, semolina and apples grated on a carrot grater to ground poppy seeds. Mix everything well.

Beat the egg whites together with salt to a stable foam, carefully mix them into the poppy seed mass. (We beat the egg whites and add them to the poppy just before assembling the poppy seed).

Dough

Rub the yeast with sugar and milk.

Mix the yolks with sour cream and melted butter, pour in the yeast, and knead the dough. Mix well, cover with a cotton napkin, put in a warm place for about an hour.

When the dough doubles in volume. We take out the dough on a floor sprinkled with flour, roll it out, divide it into 4 parts. From each piece of dough, roll out a 25×35 rectangle (according to the size of the form).

Lubricate the mold well with oil, sprinkle with breadcrumbs. We put the first layer of dough in the form, grease it with a third of the poppy mass, cover it with dough + poppy seeds + dough + poppy seeds + dough. Cover with a napkin, send to a warm place for 2-2,5 hours.

Before putting the poppy seed in the oven, grease it with milk. We bake at a temperature of 180 degrees. If the top is very burnt, cover it with foil.

After complete cooling, cut the poppy seed into squares.
