For the dough

  • Flour – 500 g.
  • Yeast – 40 g.
  • Milk – 250
  • Sugar – 80-120 g.
  • Yolks – from 3-4 eggs.
  • Oil – 100
  • Salt – 0,5 tsp.
  • Vanilla.
  • Peel

For the poppy seed filling

  • Poppy seeds – 250 g.
  • Sugar – 100 g.
  • Honey – 50 g.
  • Water – ¼ cup.
  • Flour – ½ tbsp. (or 1 tablespoon of semolina).
  • Raisins – 20 g.
  • Nuts – 20 g.
  • Protein – from one egg.
  • Orange or lemon peel.

Let’s start cooking curling iron with poppy seeds from the preparation of opara. Dissolve the yeast in warm milk, add 1 tbsp. sugar, and add flour one spoon at a time. The mixed dough should be like thick sour cream. Put the dough in a warm place (it should double in size).

Melt the butter, let it cool.

When the dough rises, add the remaining sugar, egg yolks, salt and flour. We knead the dough, at the end of the kneading we pour in the cooled butter, vanilla and zest, mix well, put it in a warm place again.

While the dough is rising, prepare the poppy seed filling.

Wash the poppy seeds well, steam them, drain them and grind them (you can grind them in a blender or grind them in a blender). Boil syrup from water and sugar (to a thread). Add poppy seeds, honey, flour or semolina to the syrup, mix everything well. When the poppy mixture cools down, add raisins, zest, chopped nuts, whipped protein and mix well.

When the dough rises, put it on the table, divide it, roll it out to a thickness of 7-10 mm.

Beat 1 egg white to a stable foam, grease the dough, spread the filling, twist the curling iron. We put it on a greased form and put it again in a warm place.

When the curls have grown, brush them with a beaten egg and put them in an oven heated to 180 degrees for 45 minutes.

Ingredients

  • Nuts – 250 g.
  • Sugar – 150 g.
  • Yolk – from 1 egg.
  • Rum or cognac – 1 tbsp.
  • Sour cream – ¼ cup.

Grind the nuts. Beat the yolk with sugar and sour cream, add alcohol, mix with the nut mass. The mass should be a little runny.

Spread on the rolled out dough for curling.
