  • Pumpkin puree – 2/3 cup.
  • Sugar – 1 cup.
  • Salt – a pinch.
  • Large eggs – 3 pieces.
  • Flour – ¾ cup.
  • Baking powder – 1 tsp.
  • Cinnamon – 1 tsp.
  • For the filling:
  • Apples – 1 kg.
  • Oil – 50
  • Sugar – ¼ cup.
  • Vanilla or cream pudding – 1 package.
  • Milk – ¼ cup.
  • Cinnamon – ¼ tsp.
  • Additionally:
  • Powdered sugar.

Pumpkin puree

Cut the pumpkin and remove the seeds. Cut into smaller pieces, put in an oven heated to 200 degrees for 40-50 minutes, until soft. Next, we separate the pulp from the skin, beat it with a blender. We select the required amount of puree. You can freeze the rest of the puree, cook pumpkin porridge.

Sponge cake

Separate the whites from the yolks, beat with a pinch of salt to a firm foam. Add sugar 2-3 spoons at a time, beating well each time. Add yolks one by one, beat at the lowest speed of the mixer.

Add pumpkin puree and flour mixed with cinnamon and baking powder, mix gently with a spatula.

We cover the baking form with parchment, pour the dough, level it. Bake at 180 degrees for 20-25 minutes.

Spread a piece of cotton cloth on the table, dust it with powdered sugar, place the cake on it, parchment facing up, carefully remove the parchment. We twist the cake with a roll together with the fabric along the short side of the cake. Leave to cool slightly.

Apple filling

Peel the apples, rub them on a coarse grater, put them in a saucepan, add butter, sugar and cinnamon, cook until the apples are soft.

Mix milk with pudding, add to apples, mix well, cook until thickened. Remove from heat and let cool a little. The filling should be very warm, but not burn your hand.

Unroll the roll, remove the fabric, grease the cake with warm apple filling, wrap the roll. Put the roll in a cold place, leave to cool.

Before serving, sprinkle with powdered sugar or pour a glaze made of powdered sugar and a few spoons of water.
