Pushinka cake with egg whites

There is often a lot of protein left over after holiday baking. We suggest using them for baking “Pushynka” cake on egg whites. Such a cake will be fluffy and tender, with the aroma of lemon. Such a cake always succeeds and is always delicious.

“Pushinka” cake on egg whites – ingredients

  • Squirrels – 7 pieces.
  • Salt – a pinch.
  • Oil – 150
  • Sugar – 1 cup.
  • Flour – 1 cup.
  • Starch – 1/3 cup.
  • Baking powder – 1 tsp.
  • Zest from 1 lemon.
  • For the icing:
  • Powdered sugar – 1 tbsp.
  • Juice of 1 lemon.

Cake “Pushinka” on egg whites – recipe

Melt the butter and leave to cool.

Beat the egg whites with a pinch of salt until stiff foam. Add sugar one spoon at a time, beating well each time. The result should be a thick, shiny, homogeneous mass. Add cooled butter one spoon at a time, beat.

Starch, flour and baking powder are mixed and sifted into the egg whites, add zest, carefully knead with a spatula.

Lubricate the cake mold with fat, spread the dough.

Bake at a temperature of 180 degrees for 40-45 minutes. Carefully remove the still warm cupcake from the mold, and when it has completely cooled down, brush it with glaze.

Glaze

Add lemon to powdered sugar and beat until white.
