Raspberry cheesecake – ingredients

  • For the dough
  • wheat flour – 175 g.
  • chicken egg – 1 pcs.
  • butter – 75 g.
  • vanilla extract – 1 tsp.
  • lemon peel – 1 lemon.
  • powdered sugar – 45 g.
  • For the cream
  • powdered sugar – 130 g.
  • cheese (cottage cheese) – 250 g.
  • cream 33% – 100 ml.
  • raspberry puree – 110 g.
  • chicken egg – 2 pcs.

Dough

Mix all the ingredients and knead a homogeneous dough. Wrap in cling film and refrigerate for an hour.

Cream

Mix cream cheese (cottage cheese), cream, powdered sugar, 1 egg, 1 yolk and raspberry puree with a whisk. But do not beat with a mixer.

Distribute the dough in the form and bake with the load in an oven preheated to 180 ° C for 10-15 minutes.

As soon as the dough sets and turns brown, take it out of the oven, pour the cream into the mold to the edges of the dough, tap so that all the bubbles come out and bake again at a temperature of 130 ° C for 40 minutes. At the same time, it is necessary to put a bowl (a special one that can withstand temperatures) with water in the oven so that the oven is moist.

As soon as the cheesecake is baked, leave it to cool for about 2 hours. You can decorate with berries, nuts, candied fruit, caramel.
