“Bee” roll – ingredients

  • For the biscuit:
  • Honey – 3 tbsp.
  • Baking powder – 1 tsp.
  • Egg – 4 pcs.
  • Sugar – 3 tbsp.
  • Vanilla sugar – 1 bag.
  • Flour – 4 tbsp.
  • Corn starch – 1 tbsp.
  • Oil (odorless) – 4 tbsp.
  • A pinch of salt.
  • For the cream:
  • Sour cream (40%) – 200 g.
  • Thickener for cream – 1 bag (8 g).
  • Honey – 1 tsp
  • Condensed milk – 2 tbsp.
  • Chopped walnuts (or cookies) – 100 g.

“Bee” roll recipe

Let’s start cooking “Bee” roll from baking the base. Put the honey in a saucepan, add the baking powder and heat it over low heat for 1-2 minutes, stirring. The mixture will turn white and increase in volume. Remove the pan from the heat and let it cool. For the dough, beat the whites, gradually adding 1 tablespoon of sugar and a pinch of salt. Beat the yolks with the remaining sugar and vanilla, and without stopping the beating, gradually pour in the oil. Now add the cooled mixture of honey and baking powder. Sift the flour into the dough and mix until smooth. Also carefully pour in the beaten proteins.

Line a baking sheet (36×28 cm) with parchment or a silicone mat (whichever is better). Carefully spread the prepared dough and flatten it. Bake in an oven heated to 180 degrees for 15-20 minutes until golden.

Cover the baked layer with a kitchen towel, quickly turn it over and remove the parchment. Carefully roll the still hot layer into a roll together with a towel and leave to cool.

It’s time to prepare the cream for “Bee” roll. For the cream, beat sour cream with honey, condensed milk and thickener.

We begin the formation “Bee” roll. Leave 4-5 tablespoons of cream for decoration. The biscuit base has already cooled, so unfold it and spread it thickly with cream. Lightly sprinkle the cream with nuts. Roll the layer into a roll. If necessary, then edges “Bee” roll level up
