Royal, festive cupcake – an interesting and not at all complicated recipe. King Cake is simply an explosively delicious mixture of simple cake batter, dried fruits, candied fruits and nuts. The taste is really amazing. We invite you to try it!

Royal, festive cupcake – ingredients

  • Flour – 400 g.
  • Sugar – 250 g.
  • Oil – 250
  • Eggs – 8 pieces.
  • Vanilla sugar – 2 tbsp.
  • Prunes (dried) – 150 g.
  • Hazelnuts (or hazelnuts) – 100 g.
  • Dried figs – 100 g.
  • Dried apricots – 100 g.
  • Raisins (small) – 100 g.
  • Candied orange peel – 100 g.
  • Candied lemon peel – 100 g.
  • Dried cranberries – 50 g.
  • Oil for greasing molds.

Cut dried fruits (candied if necessary) into smaller pieces, mix.

Line two muffin tins (24×12) with parchment.

Melt the butter, set aside to cool.

We put a pot of water on the fire, bring it to a boil. In another pan, which sits tightly on top of a pan of water, beat eggs, pour sugar, put on boiling water (the upper pan does not touch the water).

Beat the eggs with a mixer at the highest speed until the mass becomes light and thick.

We remove the bowl from the steam, put it in cold (ice water), carefully knead it until it cools down.

Sift the flour into the cooled egg mass, gently mix with a spatula. Stirring constantly, we pour melted butter into the mixture.

Add chopped nuts, dried fruits and candied fruit, mix again very carefully.

We put the dough in the prepared forms, bake at a temperature of 190 degrees for 45-50 minutes, until a “dry match”.

If the cupcake is very burnt on top, you can cover it on top with parchment.

Remove the hot cake from the mold, put it on a baking tray until it cools down completely.

Such a cake can be stored for a long time by wrapping it in parchment, it can also be frozen in portions.
