A recipe for making asparagus bean salad for the winter
- Asparagus beans – 1 kg.
- Tomatoes – 2 kg.
- Sweet pepper – 3 pieces.
- Onion – 500 g.
- Carrot – 500 g.
- Sugar – 4 tbsp.
- Salt – 2 tbsp.
- Vinegar (9%) – 2 tbsp.
- Oil – 100g.
Cut the beans into pieces that you like. We lower it into boiling water and cook it for 10 minutes.
Cut the onion into half rings and fry in oil for a few minutes.
Grate the carrot on a coarse grater and add it to the onion. Stir, reduce heat and cover with a lid.
Wash the tomatoes and grind them in a meat grinder. pass through a meat grinder.
By this time, the beans are cooked, drain the water and add the twisted tomatoes. The onions and carrots should have become golden by now, add them to the beans and tomatoes, mix well.
Grind the pepper in a meat grinder and add it to the pan. Add salt, sugar, mix, put on fire, bring to a boil, reduce heat and simmer this whole mixture for 30 minutes. At the end, add vinegar.
Without removing from the heat, pour into sterilized jars, screw on metal lids, turn upside down under a blanket until completely cool.
