- Eggplants – 1 kg.
- Carrot – 250 g.
- Bulgarian pepper – 250 g.
- Garlic – 100 g.
- Tomatoes – 800 g.
- Salt – 3 tbsp.
- Sugar – 2 tbsp.
- Vinegar (9%) – 50 ml.
- Oil – 175 ml.
- Beans – 250 g.
- Water – 500 ml.

Salad with beans and vegetables for the winter – recipe
Soak the beans in cold water for 6-8 hours in advance. Change the water, boil until ready, leave in the water.
Clean the eggplants, cut them into strips, pour water with salt (500 ml of water + 2 tablespoons of salt), leave for 30 minutes.
Grind tomatoes and garlic in a meat grinder.
Cut pepper and carrot into strips.
Pour tomatoes and garlic into a saucepan, bring to a boil, add salt (1 tbsp.), sugar, oil, pepper and carrots. Mix everything well and cook for 30 minutes (after boiling).
Drain the eggplants, wash them well, squeeze them, add them to the vegetables along with the beans. Cook for another 20 minutes. 5 minutes before the end of cooking, pour vinegar, mix well.
Pour the boiling salad into sterilized jars and cover with sterilized lids. Cover with a warm blanket until cooling.
