Salad with chicken and tangerines

Sweet citrus fruits, spicy garlic and tender chicken meat prepared in a special way perfectly complement each other. And spinach and avocado will make this one salad with chicken and tangerines unsurpassed decoration of the festive table.

Salad with chicken and tangerines – ingredients

  • chicken breasts (boneless and skinless fillets) – 500 g (2 medium pieces).
  • tangerines – 4 pc.
  • avocado – 1 pc.
  • spinach – 250 g.
  • For the marinade:
  • oil (preferably olive) – 80 ml.
  • lemons – 2 pc.
  • Dijon mustard – 1 tsp.
  • honey – 1/2 tsp.
  • garlic – 2 cloves.
  • salt, ground black pepper – to taste.

Salad with chicken and tangerines – recipe

First, we prepare the marinade. Squeeze the juice from two large lemons. We will need about 80 ml of juice. Chop the garlic.

Mix together oil, juice of two lemons, mustard, honey (can be replaced with maple syrup). Add garlic, salt and pepper. The marinade is ready. In an airtight container, it can be stored in the refrigerator for up to 1 week. But, of course, the fresher it will be – the richer the aroma and taste of your dishes will be.

Let’s start with the salad. Pour 3/4 of the lemon marinade over the chicken fillet (we’ll need a quarter later). A deep container is best for this. Leave the meat to marinate. Ideally – for the night, but a few hours will be enough to get the desired result.

Fry the marinated and paper towel-dried chicken breasts on a grill pan over medium heat. Cook the meat for 5-7 minutes on each side.

Peel the tangerines and divide them into wedges. Cover the plates with spinach leaves. Place mandarin slices and peeled and thinly sliced ​​avocado on top around the perimeter.

Cut the chicken, which has already matured, into large pieces and place the meat on the spinach between the tangerine wedges.

Lightly pour the meat and tangerine with the remaining marinade – the quarter that we saved before marinating the meat.

Can be served on the table. Bon appetit!
