Salad with squid and egg pancakes

Any egg salad with pancakes on the table looks quite original. And if you add squid to the pancakes, the salad will turn out to be unusual and even magical and definitely festive. So, as you already guessed, today we will cook salad with squid and egg pancakes.

Salad with squid and egg pancakes prepares very quickly. And in order for the salad to look good, you should add a cucumber before serving (or before guests arrive).

Salad with squid and egg pancakes – ingredients

  • Squid – 2 pieces (medium).
  • Fresh cucumber – 1 piece.
  • Eggs – 2 pieces.
  • Onion – 1 piece.
  • Mayonnaise.
  • Oil.
  • Salt pepper.
  • Greenery.

Salad with squid and egg pancakes – preparation

Boil squid in boiling water for no more than 3 minutes. We clean the squid from the film and cut it into small strips.

Cut the onion into half rings, pour the marinade (1/2 cup of water, 1 teaspoon of sugar, ½ teaspoon of salt, 1 teaspoon of vinegar), leave for half an hour.

Squeeze the marinated onion well, add to the squid, mix.

Beat the eggs well. Bake 2-3 egg pancakes in a hot pan lightly greased with oil, roll them into a tube and cut into thin strips.

Cut the cucumber in half, remove the core with a spoon (we won’t need it) and cut into thin strips. Combine all products and season with mayonnaise. If necessary, salt and pepper, sprinkle with greens. Serve immediately.
