  • For the dough:
  • Flour – 500 g.
  • Yolks – 5 pieces.
  • Sugar – 1 cup.
  • Oil – 250
  • Sour cream – 3 tbsp.
  • Baking powder – 14 g.
  • Cocoa – 3 tablespoon
  • Salt – a pinch.
  • For the filling:
  • Apples – 9 medium pieces.
  • Squirrels – 5 pieces.
  • Sugar – 4 tbsp.
  • Cherry jelly – 1 package (100g).
  • Poppy seeds – 150 g.
  • Breadcrumbs – 2 tbsp.
  • Walnuts – 2 tbsp.

Santa Barbara Square – cooking

Carefully separate the yolks from the whites. We send proteins to the refrigerator.

Beat soft butter with sugar to a white creamy state. While continuing to beat, add yolks one by one. Add sour cream and baking powder. At this stage, we divide the dough into 2 unequal parts – a larger and a smaller one.

Add cocoa and part of flour to the smaller part. Knead a soft dough. It is slightly sticky at first, but mixes well. Add flour gradually. Divide the chocolate dough into 3-4 balls and send it to the freezer.

Just add flour to the white dough, the dough should be greasy and very soft.

Wash the poppy seeds with cold water and pour boiling water over them, 1 cm above the level of the poppy seeds. Cover tightly with a lid and let it steam for 40 minutes. Drain off the excess water. Grind poppy seeds with a blender (you can grind them in a blender or grind them in a meat grinder). Add 2 tbsp. sugar and mix well.

Apples clean from the skin. Cut it in half and take out the hard center. Fill the center of the apples with poppy seeds. Squirrels beat with a pinch of salt to a dense foam, then add 2 spoons of sugar and dry jelly, gradually pouring it in.

We distribute the white dough evenly on the bottom of the form (lined with parchment), sprinkle with breadcrumbs. Spread the remaining poppy filling on the dough, put the poppy-stuffed apples on top (poppy side down). Next, we lay out the protein souffle. Sprinkle with nuts.

Take the chocolate dough out of the freezer and rub it on top of the egg whites with nuts.

We send our cake to the oven. Bake at a temperature of 170 degrees for 40-50 minutes.

Remove the cake from the oven, let it cool in the form. Cut into portions. Bon appetit!
