Solyanka with vegetable juice

Almost every man loves Solyanka, because there are as many as 4 types of meat, and this cannot but please a man’s heart (or stomach ;)))! Smakota prepared a recipe for brine with the addition of vegetable juice, which adds an even richer aroma and taste to the dish.

Solyanka with vegetable juice – ingredients

  • For 3 liters of water
  • Ham – 200 g.
  • Smoked chicken quarter – 1 pc.
  • Hunting sausages (thin) – 2-3 pcs.
  • Milk sausage – 200 g.
  • Carrot – 1 pc.
  • Onion – 2 pc.
  • Pickled cucumbers – 5 pcs.
  • Vegetable juice (we used Odessa) – 0,5 l.
  • Lemon.
  • Olives.
  • Sour cream.
  • Potatoes – 2-3 pcs. (Optional).
  • Salt, pepper (peas), bay leaf.

Solyanka with vegetable juice – recipe

Cut all types of meat into cubes. Cut hunting sausages into rings.

If we want to add potatoes, we peel them, cut them into small cubes and put them on the fire first. Boil ~ 10 min. over low heat, skimming the white foam.

Next, add a bay leaf, peppercorns (you can choose different types: white, fragrant, black, so the dish will become more fragrant) and throw in the meat.

Peel the onion, cut it into small cubes and fry it until golden.

Peel the carrot, grate it on a large grater, add it to the onion and simmer a little. Pour vegetable juice and let it boil.

Pickled cucumbers are also cut into cubes, added to the pot with meat.

Combine all ingredients in one pan and boil over low heat for 15 minutes. We can add a little more salt, but it is to your taste, because cucumbers and smoked meats are salty enough.

Serve in portioned soup bowls, adding a couple of olives, a lemon wedge cut into 4 pieces and a spoonful of sour cream.
