Soup from melted curds

The main advantages of this dish are the simplicity of the recipe and the speed of preparation. But this does not affect the taste in any way. Soup from melted curds it turns out very tender – with a creamy taste. And if you choose cottage cheese with an additional taste – mushrooms, bacon, shrimp or paprika – you will get several tasty recipes in a hurry, with which it is convenient to feed a large family.

Soup made of processed cottage cheese – ingredients (for 4 servings)

  • processed cheese – 1 pcs.
  • water – 1,7 l.
  • potatoes – 200 g (1-2 pcs.).
  • carrots – 70 g (1 pc.).
  • onion – 70 g (1 pc.).
  • red sweet pepper – 30 g.
  • mushrooms – 80 g.
  • chili pepper – 2 g.
  • cauliflower – 50 g.
  • oil – 30 ml.
  • dry vegetable seasoning – 1 tbsp.
  • 10% fat cream – 100 ml.
  • salt, ground black pepper – to taste.

Peel potatoes, onions and carrots. Cut the vegetables into medium-sized pieces. However, you can choose the format of the pieces according to your own preferences.

Put the potatoes in the pan, pour dry vegetable seasoning on top. Pour water and put the pot on the fire. Boil the potatoes in this spicy broth for about 20 minutes.

Place carrot sticks and onion cubes on a hot pan with oil. Sauté for 4-5 minutes over low heat. Vegetables should not be fried – only softened.

Add cauliflower, cut into pieces acceptable to you, sweet pepper. If desired, you can add a small piece of hot pepper. Cook for another 2-3 minutes.

Mushrooms are cleaned, washed, dried and cut into thin plates. Separately from the vegetables, cook in a pan with oil over low heat for no more than 2 minutes.

Grate pre-frozen processed cheese (7-10 minutes in the freezer is enough).

Pour the sauteed vegetable assortment from the pan and the mushrooms from another pan into the pot with the broth. Pour the grated cheese.

Next, pour in the cream, mix and cook for 10–15 minutes. At the end, add salt and pepper to taste.
