Soup with beaten egg – ingredients

  • broth (chicken or vegetable) – 1 l.
  • corn starch – 2 tbsp.
  • eggs – 3 pcs.
  • dry granulated garlic – 1/3 tsp.
  • sesame oil – 1/2 tsp.
  • ginger – 1 tsp.
  • salt, ground black pepper – to taste.
  • greens (parsley, onion, dill).

Add cornstarch, finely chopped ginger and dry garlic to the previously prepared broth cooled to room temperature (or cold).

Mix thoroughly (you can use a blender – it will not be superfluous). It is important that the broth is not warm – in this case, the starch will clump together and not dissolve.

After that, heat the broth over high heat until it boils, stirring regularly.

In short pauses between mixing, break three eggs into a bowl or cup. Beat as for an omelette.

Pour the beaten eggs in a thin stream into the boiling broth (the heat should be minimal). At the same time, stir the soup with a whisk or fork, creating a whirlpool. An egg in a hot broth will seize in a chaotic ribbon or flake shape.

After pouring all the egg mixture, add salt and pepper and turn off the heat. The soup is ready.

Before serving, pour in sesame oil and sprinkle with chopped fresh greens to your taste.
