Broccoli and cauliflower are separated into florets and steamed for 8-10 minutes, then poured with cold water. Peel and chop the onion, garlic and mushrooms, but do not mix. Grind the chili pepper in a mortar.

Heat the olive oil and butter in a heavy, deep pan and fry the onion until transparent. Add garlic, chili pepper and mushrooms, salt and, stirring, fry over low heat for about 10 minutes, until the mushrooms are ready. Pour in the broth.

Cut off the tops of the florets from the boiled broccoli. Blend the remaining halves of broccoli, cauliflower and mushrooms together with the broth in a blender. Pour cream into the whipped soup and heat it.

Grate the cheese on a fine grater. Finely chop the parsley. Add broccoli tops and parsley to the soup, sprinkle with cheese and serve. You can fry croutons with garlic for the soup.
