Sour cream cheesecake Three tastes

Today, you and I are breaking stereotypes – cheesecake made of cheese – it’s too simple . we bake sour cream cheesecake “Three tastes”. Such cottage cheese turns out to be delicate, like bird’s milk, it does not settle after baking, because the structure is much lighter than ordinary cottage cheese.

Sour cream cheese “Three tastes” – ingredients

  • For the dough:
  • Flour – 3 cups.
  • Yolks – 3 pieces.
  • Vanilla sugar – 15 g.
  • Sugar – ½ cup.
  • Baking powder – 2 tsp.
  • Butter (margarine) – 250 g.
  • For the “cheese” mass:
  • Squirrels – 6 pieces.
  • Sugar – 1,5 cups.
  • Chocolate pudding – 1 package.
  • Cream pudding – 1 package.
  • Caramel pudding – 1 package.
  • Sour cream (20%) – 3 packages (400 ml each).

Dough

Mix flour with baking powder, sugar and vanilla sugar, add solid butter cut into small cubes, cut with a knife until small butter-flour crumbs are formed. Add yolks, knead the dough.

Divide the dough into 2 equal parts, wrap it in cling film, put one part in the refrigerator, the other in the freezer, leave for 50-60 minutes.

“Cheese” mass

Beat two egg whites until stiff foam, add sugar (1/2 cup) a spoon at a time, beat until a smooth shiny mass is formed, add pudding, beat briefly (only until the components are combined). Add sour cream, carefully mix with a spoon.

In the same way, we prepare two more layers of “cheese” mass, only the flavors of the pudding change.

We collect cheese curds

Take the dough out of the refrigerator, roll it out and put it in a form (25×30) lined with parchment, prick it with a fork, put chocolate cheese on top of the dough, caramel cheese (carefully spread over the chocolate) and cream cheese (carefully spread).

Take the dough out of the freezer, rub it on a coarse grater, and spread it evenly over the entire surface of the cheesecake.

Bake at 180 degrees for 60 minutes.

Leave the cheesecake in the form until it cools completely, only then remove it from the form and sprinkle with powdered sugar.
