Spinach roll with salmon

An original and easy-to-prepare festive snack – spinach roll with salmon. Thanks to the successful combination of flavors and colors in the roll, this snack will become a bright decoration of any table.

Spinach roll with salmon – ingredients

  • For the cake:
  • Spinach – 300 g (fresh or frozen. Frozen should be thawed and squeezed well).
  • Oil – 3 tbsp.
  • Eggs – 4 pieces.
  • Flour – 4 tbsp.
  • Salt – ½ tsp.
  • Pepper – ¼ tsp.
  • For the filling:
  • Salmon (smoked or salted) – 300 g (it is better to take thin slices right away).
  • Cheese – 250 g.
  • Oil – 50
  • Garlic – 1-2 cloves.
  • Salt pepper.

Wash and dry the spinach. Put in a blender bowl, add oil, beat until smooth.

Separate the proteins from the yolks. Add salt to the egg whites, beat until stiff foam. Add yolks one by one, beat at the lowest speed of the mixer.

Add pepper to the flour, mix. Add flour and spinach alternately with a spoon, carefully mix with a spatula.

Line the form (30×40) with parchment, spread the dough, level it. Bake at a temperature of 200 degrees for 20-25 minutes.

Remove the cake from the oven. Grease the parchment with oil, transfer the cake onto it (the paper should be the size of the form, or larger), carefully remove the parchment on which the cake was baked.

Roll the cake together with the parchment into a roll, leave to cool.

Put the cheese and butter (at room temperature) in a blender, beat well until a homogeneous paste is formed. Add squeezed garlic, salt and pepper to the curd mass.

Unroll the cooled cake, spread it with cheese mass, lay out the salmon plates and roll it into a tight roll.

Wrap the roll in food film or parchment, send it to the refrigerator for at least 30 minutes. Cut the cooled roll into slices.
