The perfect combination of flavors in the bread makes it the perfect culmination of any holiday. In addition, the braid turns out to be very interesting in the cut, it is well suited for a candy bar.

  • For bіskvіtu:
  • Eggs – 8 pieces.
  • Sugar – 300 g.
  • Flour – 100 g.
  • Starch – 100 g.
  • Cocoa – 2 tablespoon
  • Baking powder – 1 tsp.
  • Salt – a pinch.
  • For tubes:
  • Flour – 250 g.
  • Oil – 125
  • Sour cream – 125
  • Yolk – 1 piece.
  • Salt – a pinch.
  • Freebie cream
  • Yolks – 4 pieces.
  • Sugar – 4 tbsp.
  • Vanilla sugar – 10 g.
  • Flour – 1 tbsp.
  • Starch – 2 tbsp.
  • Milk – 1,5 glasses.
  • Oil – 400
  • Vanilla halva – 300 g.
  • For apple mass:
  • Apples – 2 kg.
  • Gooseberry jelly (kiwi) – 2 packages.
  • Sugar – to taste.
  • For the icing:
  • Oil – 50
  • Powdered sugar – 3 tbsp.
  • Cream – 3 tbsp.
  • Cocoa – 1 tablespoon
  • Gelatin – 1 tsp.
  • Water – 1 tbsp.

Cake with tubes of halva – recipe

Sponge cake

Separate the proteins from the yolks. Beat the egg whites with a pinch of salt until stiff foam. 1-2 tbsp. add sugar, beat well each time at the highest speed of the mixer. Add yolks one by one, beat at the lowest speed of the mixer.

Mix flour with starch, baking powder and cocoa, sift to an egg mass. Carefully knead with a spatula.

Cover the bottom of the mold (25×35) with parchment, spread the dough. Bake at a temperature of 170 degrees for 30-40 minutes, until a “dry match”. Leave to cool. Cut into two cakes.

We sift the flour, add a pinch of salt, add cold hard butter, cut into cubes. Cut with a knife to form fine butter crumbs, add yolk and sour cream to the crumbs, knead the dough. Wrap the dough in cling film and

leave in the refrigerator for at least 2 hours.

Take the dough out of the refrigerator, roll out thinly, cut into strips about 2 cm wide.

Grease the tube form with oil, roll up the dough, starting from the narrow part. We put the tubes on the form, bake for about 15 minutes at a temperature of 170 degrees. Remove the tubes from the molds while they are still hot.

Cream for tubes

Add egg yolks, flour and starch to half of the milk, mix well so that there are no lumps.

Add sugar and vanilla sugar to the rest of the milk, put it on the fire, bring it to a boil. Pour the previously prepared mixture into the boiling milk, stirring, cook until empty.

Transfer the cooked cream to a ceramic dish, cover with cling film so that it touches the entire surface of the cream, leave to cool.

Beat the butter to a soft creamy mass, add the custard one spoon at a time, beat until smooth.

Grind the halva into a powder, add to the cream, beat well again.

***Attention*** Halva and butter should be at room temperature.

Fill the tubes with cream.

Apple mass

Peel the apples, rub on a coarse grater, fry for about 10 minutes in a pan (from the moment of boiling). Add sugar to taste (do not overdo it, because the apple mass should be sour in the finished cake).

Remove apples from heat, add dry jelly, mix well, leave to cool.

Glaze

Dissolve the gelatin in a tablespoon of hot water.

Melt the butter in a pan, add the rest of the ingredients, bring to a boil, remove from the heat, add the dissolved gelatin. Leave to cool.

We collect the braid

Place the bottom half of the biscuit in a form, spread with a thin layer of halva cream (half of what remained after filling the tubes). We lay out half of the apples, lay out the tubes, slightly pressing into the mass, cover with the rest of the apple mass. Spread the rest of the cream on top (in a thin layer, cover with the rest of the biscuit. Pour over the glaze, put the cake in a cold place for 5-6 hours.
