Squid fillets are thawed in air or in cold water with a small addition of salt, after which the skin is removed from the fillets. So that the squid fillet does not become tough during frying or boiling, it is beaten on both sides.
It should be remembered that squid meat does not require long heat treatment, if it is boiled or fried for too long, it quickly loses its taste and nutritional properties. The average time of such processing for squid meat is 3-5 minutes.
A recipe for a squid snack with pickled onions and sweet pepper
- Black pepper (peas) – 6 pieces.
- Vinegar essence – 1 tbsp.
- Sugar – 2 tsp.
- Salt – 1 tsp.
- Bulgarian pepper – 0,5 pieces.
- Onions – 3 pieces.
- Squid – 600 g.
- Bay leaf – 2 pieces.
- Water (boiled) – 1 glass.
- Oil – 2 tbsp.
First, clean the squid. Each hostess has her own method of this not very pleasant procedure. It is best to clean them well frozen, then the film is removed like a stocking. Squids were cleaned, washed, freed from chitin plates.
We lower our squid into boiling water. After boiling, cook for exactly 2 minutes and quickly remove from the water. We leave them to cool.
And at this time, let’s deal with the onion: clean it and cut it thinly into half rings. And we will prepare the marinade. Add salt, sugar, vinegar essence to a glass of water, mix everything. We put the onion in a pan, put the bay leaf and peppercorns. Pour marinade and bring to a boil, do not boil. Turn off the gas and leave to cool.
By this time, the squids have matured, cut them into very thin strips. Pepper is also cut into almost transparent slices. Remove the onion from the marinade, transfer it to the squid with pepper. Add oil. We mix all this together.
