Sriracha hot sauce

Spicy Sriracha sauce (sriracha, siracha, sriracha) – a sauce of hot pepper, garlic, salt, sugar and vinegar. This is a well-known Thai sauce based on the fermentation of hot pepper and garlic. We highly recommend preparing such a sauce, although it is very spicy, it is incredibly tasty!

The sauce can be used to prepare hamburgers, pizza, hot sandwiches, main dishes, meat.

Spicy sriracha sauce – ingredients

  • Hot pepper pods – 800 g.
  • Garlic – 80-100 g (one head).
  • Brown sugar – ½ cup.
  • Salt – 3 tsp. (no top).
  • White wine or apple vinegar – 1/3 cup.

Wash the pepper, dry it, cut off the green tails and thin tips.

IMPORTANTLY. To work with hot pepper, it is better to use gloves and not to touch your face.

We clean the garlic, grind it together with the pepper on a meat grinder (nozzle with small points).

Add sugar and salt, mix.

Pour the mixture into a clean (preferably sterilized) dish (preferably glass), cover with cling film and leave at room temperature for 5-7 days for preliminary fermentation. There should be signs of fermentation – bubbles, increase in volume.

Put the leavened mass in the bowl of a blender and beat until a smooth sauce is formed. Grind through a sieve.

Pour the resulting mass into a pan, bring to a boil, stir and boil for another 15 minutes, add vinegar, bring to a boil again. We try, if necessary, add a little more sugar or salt. Let’s boil for another 5 minutes, pour into a sterile dish, tightly twist.

Turn the jars upside down, leave to cool completely.

Store the sauce in a cool, dark place.
