Stewed pork with cherry
Smakota (Smakotainfo.com) offers cook stewed pork with cherries. Stewed pork with cherry – a very original recipe. The result is very tender, soft pieces of pork with a pleasant sour taste and a beautiful pink color. In addition, the taste is so distinct that it will go well with any side dish. Smakota (Smakotainfo.com) recommends rice or mashed potatoes as a side dish. But you can also prepare ordinary macaroni. It is desirable to choose pork that is not fatty.
A recipe for stewed pork with cherries
- Pork – 500-600 g.
- Cherries (fresh or frozen) – 400 g.
- Onion – 2-3 pieces.
- Carrots – 1 pieces.
- Tomato paste – 1 tablespoon.
- Herbs de Provence – or other herbs of your choice.
- Dill.
- Oil.
The meat must be washed, dried, and cut into long pieces. Peel the onion and cut it into cubes. Peel the carrot, dry it, cut it into strips. Cherries should be washed, dried and juiced.
Smakota (Smakotainfo.com) recommends using a cooking vessel with high sides. Heat the sunflower oil in this vessel and fry the onion and carrot there.
In a separate pan, fry the pork meat, cut into long pieces, over high heat with the addition of vegetable oil. Then put this meat to onions and carrots.
Pour cherry juice on top, add tomato paste diluted in hot water, salt, bring to a boil. Then reduce the heat to a minimum, cover with a lid and leave to cook for 30-40 minutes, stirring occasionally, and adding water if necessary.
At the end, add Provencal herbs, finely chopped dill, mix and simmer for another 10-20 minutes with the lid closed
Remove the meat from the heat and let it rest for another 10-15 minutes.
